Stir Fried Quinoa (Vegetarian)

Quinoa is actually not a grain, it's a seed of a leafy plant that is related to spinach.
Quinoa's very high in protein and amino acids...
they are ideal for diabetics because of its low GI!
you can read more HERE...there's lots of nutrients in there!
This is my first time trying to stir fry Quinoa with some colourful ingredients!
I'm sure this is packed with loads of nutrients!
I had this for lunch today...

The ingredients in there are
  • Cooked Quinoa
  • Garlic
  • Pumkin
  • Mushroom
  • Black Fungus
  • Carrot
  • Xiao Bai Cai

Healthy right?!
I just used about 1/4 tsp of oil and 1 tsp soy sauce.
1 big plate = full tummy!

It's just like any other chinese stir fried dishes..but much healthier!!

  4. Hi Coraine, I'm loving quinoa. I'm new at cooking, though. Do I need to boil the veggies for a while before stir-frying them with the cooked quinoa? I've stir-fried quinoa with veggies before but sometimes, I find it's such a lot of work because I still have to boil the veggies, especially the carrots--I'm wondering if I'm doing the right thing.

BTW, quinoa with grilled/semi-fried eggplant and a bit of tomato sauce tastes good, too. I think it'll taste better with some baby prawns. I love quinoa 'cause it has a lot of flavor on its own so no need for too much seasoning. I've also stir-fried quinoa with mushrooms, chicken, tomatoes and a bit of parsley + light soya sauce/jap soba sauce. Heavenly. :D
