Less Sinful Crème Caramel

I watched one of  孟老师's old video of Crème Caramelon on Asian Food Channel..
Her original recipe asked for 120g whole egg and 25g additional egg yolks.
Although I have lots of eggs in the refrigerator..I wanted to make something healthier.
So Kanten came into my mind..I went ahead to give it a try!


It worked really well !!
My man said he thought it's made of milk, eggs and cream before I revealed that it's Kanten!
and what's more...this doesn't require any baking! Get to save some electricity too..heehee



It's smooth and silky...with a thick milky taste!
A dessert which made me addicted..
I had this for breakfast today! 
Couldn't control myself after snapping these pictures..

The caramel went so well with the pudding!
Try it by yourself to taste how fantastic it is!

Less Sinful Crème Caramel

Caramel :
40g Sugar 
15g Water


1. Boil sugar and water in a heavy metal pot over low heat. Do not stir. 
2. When the sides start to turn brown in colour, stir around the sides. Slowly incorporating into the center.
3. When it turns to coffee brown, remove from heat immediately. (Caramel burns really fast)
4. Use a tablespoon and spoon caramel into a aluminium tart mould or ramekin.
5. Tilt mould/ramekin around to coat the bottom with caramel evenly. 
(Be quick, as caramel dries up really fast too)
6. Set aside.

Pudding :
300ml Fresh Milk
40g Sugar
1 tsp Vanilla Extract/Essence
2g Kanten (Half packet)


1. Mix milk and sugar over medium heat in a pot.
2. When bubbles start to appear at the sides, pour vanilla extract/essence in. Mix well.
3. Sprinkle Kanten into the milk mixture and let it boil for at least 2 minutes.
(Any shorter than 2 minutes, pudding will not form)
4. Remove from heat and pour into moulds/ ramekins.
5. Let cool completely and store in refrigerator.
6. Serve cold.

  3. I have not seen Kanten here, what should i replaced with Kanten? Love this healthy version, would like to try it. Ya, next time if i come to SG again, i'm sure look for you,hehehe..

  7. Mm...I love creme caramel! This looks so smooth and delicious! I'd never heard of Kanten until now, but using it to make creme caramel sounds like such an interesting idea!

  8. CG..i didnt know that cooking with dog have this kind of recipe! I must go and check it out!

    Eggplant..it's really smooth..must try~!

    Sonia..you can replace it with Gelatin..but the amount is about 1 1/2 tsp gelatine with 400ml water..take 2 tbsp milk and sprinkle the gelatine..let it swell..about 8 mins..then heat up the other milk, then mix all together, bring to a small boil, scrape the sides down, add sugar and vanilla..when sugar has melted then done!

    Jean..I love the caramel!! But i think the milky part is the killer for this..hehe
