我们的家常菜 Hokkien Mee


This is one of our 家常菜 (Home cooked food)

The Hokkien Mee..
My mummy is a Hokkien, and she passed this recipe down to me  =)
I used to prepare ingredients for her and stand beside while she's cooking.
After many years of observation, I started to cook this when I was like 20.
Wanna thank my mummy for passing this precious skill to me.



Normally we will include prawns, fishcakes, pork and fish,
but to make it a little bit healthier, I omitted pork and added lots of vegetables.
It still tasted the same..and after one serving, it's not enough...same for my man.. =)



The dark noodles glistening with oil...
It's heavenly, but for me, it can only be eaten once in a while,
There's lots of oil and colouring in there  =p
although my mum cooks it like once every 2 weeks.



I used this Best Dark Soya Sauce.
It's really thick and better!
Especially when it comes to cooking Hokkien Mee..

Seafood Yakisoba 焼きそば


One of my friend is a flight attendant, so she helped me to get some goodies from Japan,
as buying Japanese stuffs in Singapore is really costly~
She bought one big plastic bag of food stuffs for me,
like okonomiyaki sauce, soba sauce, sesame salad dressing, instant gravy to cook prawns e.t.c.
and all of these only cost SGD20...
All the sauces were left in my shelf for months..and I decided to use them..finally!

This is one of the yakisoba sauce..
But I don't know why it is a bit diluted. 
Not so thick. But a good point is that it's not so salty too...



Yakisoba is literally known as fried noodles.
Although it's called soba, but the noodles are not made from buckwheat.
It's made from wheat flour instead.
 My first Yakisoba!
These frozen prawns from Indonesia were really crunchy! Better than some fresh prawns!
And scallops tasted just as good!


 As for the noodles. I got them from Meidi-ya..
it's a simple and nearly instant meal to make plus it doesn't take much time to prepare...
Try it...it's delicious!

Yakisoba 焼きそば
(serves 2)


2 Packets of Yakisoba Noodles
8 Prawns
6 Scallops
1 Shredded Yellow Onion 
1/2 Shredded Cabbage
Japanese Mayonnaise
Handful of Katsuobushi (Bonito Flakes)
6 - 8 Tbsp Yakisoba Sauce
A Pinch of Salt



1. Sauteed onion with some oil until soft and slightly brown.
2. Add prawns, scallops and cabbage. 
3. Stir fry till prawns are half cooked and add the soba. 
4. Use a chopstick to separate the soba up. Add yakisoba sauce and continue to stir fry until ingredients are cooked and add a pinch of salt, stir well. 
5. Serve Yakisoba on 2 plates and drizzle with mayonnaise then top with Katsuobushi.

简单的凉拌面 Simple Cold Noodles (Vegetarian)


Today's lunch!
Cold noodles and it's all veg....
some may not find it appetizing as there's no meat in there =)
But this is definitely a refreshing lunch! Especially with this warm weather~


I used organic udon...


After adding the sauce,
it becomes flavourful and it's best when chilled~


简单的凉拌面 Simple Cold Noodles (Vegetarian) 

One Portion of Noodle
Shredded Carrot
Shredded Celery
Shredded Cucumber
Sesame Seeds/Ground Sesame (best pan fried without oil or toasted)

Sauce:
1 1/2 Tbsp Dark Soy Sauce
1 tsp Light Soy Sauce
1/2 tsp Sesame Oil
1 Tbsp Dark Vinegar

1. Cook noodles as directed on package.
2. Drain away water and transfer noodles to a bowl of cold water.
3. Shred all vegetables.
4. Mix seasoning together.
5. When noodles have cooled down, place them on a plate
and decorate with shredded vegetables.
6. Sprinkle with lots of sesame seed/ground sesame.
7. Drizzle sauce all over & mix well.
8. Chill again if you want it to be colder.

Note: to let noodles absorb more seasoning, mix sauce with noodles first,
and put in fridge for 30 minutes then add ingredients.
