Almost Instant Cheesy Baked Rice


One day, I ran out of idea what to cook for dinner..
I cooked some Japanese short grain rice, it's already very near to dinner time,
so this came into my mind...
Baked rice! It's actually very simple and fast to make...


Here's how i made mine...
1. Slice 250g swiss brown mushrooms.
2. Mince 4 cloves of garlic.
3. Sauteed garlic with 1 Tbsp of oil/butter in a pot.
4. Add sliced mushrooms and cook briefly.
5. Pour a can of Marks & Spencer minestrone soup and 2 of rice into the pot.
6. Season with salt and black pepper to taste, mix well. Remove from heat.
7. Spoon into 2 individual bake ware and top with cheese (preferably mozzarella).
8. Bake in 180 degrees preheated oven for approximately 15-20 minutes.
9. Top with chopped parsley before serving. 


Done!  =)  Isn't it easy to make?
It's a kind of comfort food for me!
I seldom indulge in cheesy stuffs...
My choice is Marks and Spencer canned minestrone soup because it's not so salty.

Omu "Brown" Rice


Omurice is Omelet + Rice...
and here I have..Omu "Brown" Rice...
With a bright smiley face!
Don't be mistaken...
this meal is not catered for kids. 
HAHA..it's for my man and myself!
My man saw this and laughed
I think it's a good way to put a smile on your love ones,
with all this little ideas.




Additional fiber for the meal~!

Cut the omelet up, and this is what you get...
the fried rice! =)
Mine doesn't have any meat though...
but the sweetness of the vegetables make it taste yummy!

I'm very determined this time to improve my health for a better future.
I realised that controlling diet alone is not enough to correct the situation.
I've just jogged for 25 minutes, and hope that the timing can be increased gradually.
In addition, aim to exercise for at least 3 times a week!
I want to be healthy!
Bad health go away! Shoo!

Omu "  Brown"   Rice
Serves 2
 
Fried Rice
1 1/2 Cups Cooked Brown Rice
1 Tbsp Oil
4 Cloves Garlic, Minced
1 Medium Yellow Onion, Diced
1/4 Cabbage, Shredded
2 Baby Carrot, Diced
2 Tbsp Okonomiyaki Sauce
A Pinch of Salt and Pepper

1. Sauteed onions in preheated oil until soft and translucent.
2. Add garlic and keep stirring til fragrant.
3. Now, add cabbage, carrot, and cooked brown rice, mix well.
4. Season with okonomiyaki sauce, salt and pepper.
5. Remove from heat and set aside.

Omelet 
 1 Tbsp Oil
3 eggs, beaten
(Divide into 2 Portions)

Organic 7 Colour Beans Brown Rice

My blood pressure is relatively high nowadays..
I don't feel well at times,
there will be headaches and dizziness..
I'm trying to lower it by cutting down on my sodium and fats intake
to see whether it helps.
I don't want to take any medication.
Once I start, it will be for a lifetime...
I'd rather control by my diet.

I came up with this recipe...
to make the rice tastier by just using beans.
So no seasonings needs to be added to the other dishes.
Just steam some fish or chicken and vegetables, and eat it plain.

There are 7 beans in there.
  • Adzuki Beans
  • Mung Beans
  • Black Beans
  • Green Split Peas
  • White Kidney Beans
  • Red Split Lentils 
  • Yellow Split Lentils
I'm sure it's full of nutrients!

    Our nutritious rice for dinner..




    it's a whole new experience,
    there's a hint of sweetness in every bite.


    Even Piano is waiting for her share!
    She whines without fail whenever she's waiting for her meal to be served...!

    Organic 7 Colour Beans Brown Rice

    1 Cup Brown Rice (Soaked 12-24hours)
    1 Cup Mixed Beans (Soaked 12-24 hours)

    1. Cook the soaked beans in a thermal cooker or pot with water until tender, but not mushy. 
    2. Combine soaked brown rice with cooked beans and 2 cups of water which the beans were cooked in.
    3. Transfer to rice cooker. Cook for about 20 minutes or until rice is cooked.
    4. Serve hot with spring onion as garnish.

    Milk Rice With Salmon

    In a Japanese travel show, I saw this man cooking rice with milk instead of water.
    It's a great idea! So I tried..!
    I can't remember the contents of the show,
    the ingredients that I can remember are only rice and milk, he cooked on the stove, and i cooked mine with rice cooker.

    So here's mine, with some changes...
    Milk rice topped with salmon and broccoli...


     I can barely taste the milk.
    But it's really very fragrant..

    My pictures are abit blurry and grainy as I think there's something wrong with my lappie or cam,
    the file size seems to be really small..
    got to find out the reason.
    Hope to have clear pictures soon~!
    Here's the recipe for the Milk Rice,
    I believe that children will love it...


    Milk Rice With Salmon
    (serves 2)

    1 cup Short Grain Rice
    1 3/4 cup Milk (I used Farmhouse low fat)
    6 cloves minced garlic
    Salt and black pepper to taste
    Salmon cut into 1/2 inch slices.
    Broccoli cut into small florets

    1. Wash rice. Mix mince garlic, rice and milk together.
    2. Cook in rice cooker till cooked, timing depends on individual cooker.
    3. When rice is cooked, add in a pinch of salt, few sprinkle of black pepper and mix well.
    4. Lay salmon slices and broccoli on the rice and cook for another 5 minutes, or until salmon is cooked.
    5. Sprinkle more black pepper onto rice before serving.
    To add extra fragrance, top rice with unsalted butter.

    Vegetarian Shrooms Fried Rice


    Sorry for the lack of post...
    I was down with flu, sore throat and fever for the past 3 days,
    and my wedding is next week! 
    Luckily it did not happen on my big day.


    The day before I fell sick, 
    I made this for dinner...


    2 kinds of mushrooms in the fried rice,
    Enoki and Shitake...
    Just fry garlic in oil and stir fry all the ingredients together with some Japanese Sukiyaki Sauce..
    & done~ very easy~
    OK I know all these are boring food..

    I'm craving for some sinful desserts right now!
    After my wedding, I will bake all sorts of evil desserts!!!
    Wait for me!! =p
