Roasted Edamame Salad


Have you tried roasting Edamame before?

I did it~
A healthy vegetarian dish! Suits me really well~~

I was inspired by Alton Brown from Good Eats.
I love to watch his show, really creative & always interesting~!
Lots of explanation done, from chemistry to physics..
Actually any kind of explanation about food~
A great program!



I did not follow the recipe closely,
just adapted his idea of roasting all these ingredients together.



Topped my brown rice porridge with this salad, 
and that's all for my dinner.
felt good without feeling sinful~!
 And it's easy to make..take a look at the recipe =)

Roasted Edamame Salad


1 Cup Shelled Edamame
1 Cup Corn Kernels
15 Cherry Tomatoes
1 Head of Garlic, Minced
1 Medium Yellow Onion, Chopped
1/2 tsp Black Pepper
A Pinch of Salt
1/2 tsp Olive Oil

1. Preheat oven @ 200 degrees.
2. Mix all ingredients together. 
3. Place them in an oven proof dish.
4. Bake for 15 minutes.
5. Serve it hot or refrigerate it to serve cold.
