So how did I make it?
My recipe is very simple as there's no sake or mirin involved. I don't need it to be extremely flavourful..
Just feel that hon-dashi granules are enough to make the chawanmushi yummy!

Chawanmushi (Serves 3)
2 large eggs
310ml of hon-dashi stock (Use 1 TBSP of hot water to dissolve hondashi granules, after it's dissolved mix into the remaining water)
Shimeji mushrooms
fishcakes
1 inch chicken fillets
1. Beat the eggs.
2. Combine hon-dashi stock and eggs. Mix.
3. Place chicken into bowls/cups.
4. Sieve mixture into individual bowls/cups, cover with aluminum foil.
5.Steam on low heat for 6 minutes, for decorative purposes,
top chawanmushi with fishcakes and shimeji mushrooms carefully.
6. Steam further for 6 minutes.
7. Serve hot.
